1     Meat Mutton (pasande cut)    1  kg
2     Papaya paste 2 tablespoon
3     Onion paste  100 gm/ 5 table spoon
4     Jaifal nuts powder   ¼ teaspoon
5     Javitri powder   ¼ teaspoon
6     Cumin powder (Zeera) ½ teaspoon
7     Black cumin powder (Kala Zeera)  ½ teaspoon
8     Clove  powder ½ teaspoon
9     Bayleaf powdered(Tajh paath)   ½ teaspoon
10     Black pepper powder  ½ teaspoon
11     Cinamon powder(Daar Cheeni)   ½ teaspoon
12     Cardimom powder(Choti Elaechee)  ½ teaspoon
13     Poppy seed (khashkhash) paste 2 teaspoon
14     Yogurt  2½ cups or 300gm
15     Ginger paste  1 tablespoon
16     Garlic paste ½ tablespoon
17     Red chili power  2 teaspoons or as per taste
18     Mustard oil 100 gm
19     Salt As per taste  1 ½ tea spoon
20      Green Chilli Big   2 pieces
21     Lemon & Coriander leave for garnishing.

How to cook Bihari handi gosht:

  1. Marinate meat in ginger & garlic paste, papaya paste and  salt for half hour to 1 hour.
  2. Now Add cardamom powder, cinnamon powder, black pepper powder, bay leaf powder, Jaifal & javitri powder, clove powder, cumin powder, onion paste, poppy seed paste, yogurt, mustard oil & red chili powder to the marinated meat and leave for 20 minutes more
  3. Put it in a clay handi and add one cup of water, cook for 40 minutes or till the gravy becomes thick and meat is done.
  4. Once the meat is done put  2 pieces of  green chilli cut vertically with the knife just to make one long opening to improve fragrance
  5. use lemon and coriander for garnishing.
  6. Serve preferably with kulcha or tandoori roti
