1 Whole Chicken 1 with skin
2 Garlic Paste 2 tablespoon
3 Nutmeg Powder ¼ teaspoon
4 Paprika Powder 1 teaspoon
5 Turmeric Powder ¼ teaspoon
6 Oregano 1 teaspoon
7 Red Chili Powder 1 teaspoon
8 Rosemary 1 teaspoon
9 Vinegar ½ cup
10 Soy Sauce 2 tablespoon
11 Black Pepper 1 teaspoon, crushed
12 Fennel Seeds 2 teaspoon, crushed
13 Salt To taste
14 Olive Oil ½ cup


Procedure for preparing Whole Roasted Chicken:

  1. Take a deep bowl and mix together garlic paste, nutmeg, paprika, turmeric, oregano, red chili powder, rosemary, vinegar, soy sauce, salt and black pepper.
  2. Now marinate whole chicken with prepared marinade in bowl.
  3. Let it marinated for 1 to 2 hours.
  4. In a steamer, steam the chicken till all sides are thoroughly cooked. Take it out and keep it aside.
  5. In a wok, heat ½ cup of olive oil and fry fennel seeds.
  6. Once they start to crackle, put cooked chicken.
  7. Fry till all sides turn golden in color.


Tip: You can use vegetable oil instead of olive oil. Garnish with lemon juice and onion slices.
